Sausage making 101

By: Magda Walczak

Well, it’s more like sausage making 099. I’m not actually giving you recipes for making sausage… mostly because I don’t know how to. :) Making kielbasa (Polish for “sausage”) is literally the only thing my dad cooks EVER. Unless boiling water counts. Anyways, if you’re one of those people who does want to see how sausage is made, keep on reading. Otherwise, look at Saylor dog.

To those brave enough – here’s how you make kielbasa

Once a quarter my family gets together and buys an embarassingly large amount of pork. The next few days are filled with portioning the meat for hams, bacon and sausage. It’s a lot of work (and a lot of stress for the dogs and cats who have to smell the whole endeavour but aren’t allowed near the meat) but the end result is suculent, smoky deliciousness. Yes, you should invite yourself over the next time we do this. Yes, you should review these photos because we’ll put you to work.

Here’s sausage making in pictures (from the summer – I didn’t take photos when we made it last in December). If you’re not this adventurous, you can always try Andy’s Deli for a great selection of Polish meats. My favorite is their wedding sausage.
